There are many vegan options at the grocery store to serve as a main protein for our meals. They are tasty, and I do use them, but it is always best to look at these as occasional add ins and not a daily add in to our meals. When buying these products, even though they can be healthier than their meat counterparts, they are typically a lot higher in sodium and additives than necessary. They can also add up in cost so if you are trying to save money many of these products you can create yourself. There are a few recipes for seitan and seitan steak that take a lot more time to create. Although they are delicious, sometimes we want something that is a bit easier to prepare. This recipe takes a bit less time, it is still not a quick dinner but it is fairly easy to create and the ingredient list is not as long. The main ingredients you will need with out a doubt, but as with anything you can play with the seasonings until you find your perfect recipe. Here is what I used:
1 cup vital wheat gluten
3/4 cups cold water or veggie broth
2 tbs low sodium soy sauce
3 tbs nutritional yeast
1 tbs smoked paprika
2 tbs garlic powder
Mix your dry ingredients then add your wet ingredients mixing well until you get a dough ball. Knead for a couple minutes to activate the gluten and then let it set for a couple of minutes. Break the dough into 4 even parts and then flatten them with your fingers creating a steak like patty. In a large pan you want to have either water or veggie broth heating up while you are creating your steak mixture. When your liquid is at a nice steady simmer add your steaks to the liquid. I used broth for the added flavor. Make sure that the steaks are completely covered. Keep this at a simmer, if you cook them too hot they will become more mushy and less stable. You are going to cook these for 30 min. When they are done, scoop them out of the pan and drain the excess liquid and pat dry. Now in a skillet on low to medium heat you will add them to your pan along with vegan butter or your choice of oil. Allow them to brown nicely, I feel like the crispier the better. Add a bit of soy sauce to them while they are cooking to add some additional flavor. Once they are done serve with your veggies, and whatever else you choose. These would be tasty with a nice vegan gravy, which if you use the veggie broth you can use that as your base. Enjoy!
